Rice Pudding
This recipe for rice pudding is so easy and delicious. You'll have a batch of rice pudding ready to eat in less than one hour.
This easy rice pudding recipe is very creamy and reminds me of the rice pudding my mamie - grand-ma - used to make. Rice pudding makes a fantastic comfort food...any time, but especially during cold winter months don't you think?
For me the best part of this recipe is that it is not a baked rice pudding. You may also enjoy this fact since it saves a lot of time...and energy.

Recipe For Rice Pudding
Recipe for Rice Pudding; Ingredients
- 3 cups of water
- 1 1/2 cups of medium or short grain rice
- 4 cups of milk - divided
- 2/3 cup of sugar
- 2 large eggs
- 2 tablespoons of butter
- 2 teaspoons of vanilla extract
- 1 teaspoon of cinnamon powder - optional
- 1 1/3 cups of raisins - optional
Note: If you choose to use raisins, soak them overnight for an even better flavor and plumper raisins

- Place the rice and the water in a pot. Place a lid on top and put the pot on the stove on medium heat.
- Minute rice pudding recipe, Set your timer for 20 minutes.
- When the rice is cooked and the water is absorbed add 3 cups of milk to the pot. Once again cover and set your timer for 20 minutes.
- In a large bowl, beat the two eggs with the remaining cup of milk. Set aside.
- When the milk is absorbed, add the sugar and the milk/egg mixture to the rice. Mix thoroughly and continually for 2 to 3 minutes.
- Note: If you are putting raisins in your rice pudding, add them at this time as well - along with the cinnamon.
- Take the pot off the stove. Add the butter and the vanilla extract.
- Serve warm or cold.
- Makes about 8 servings.
